How to prepare
Boil water: Bring salted water to a boil in a large pot.
Add vegetables: Add diced potatoes and cook for about 10 mins, then add green beans for 2-3 mins until bright green.
Cook pasta: Add the trofiette to the same pot and cook until al dente (check package directions).
Reserve water: Before draining, scoop out about a cup of starchy pasta water.
Combine: Drain the pasta and vegetables and add them to a large bowl or back into the pot (off heat). Add the pesto and toss, adding splashes of reserved pasta water to loosen the sauce to your desired consistency.
Serve: Finish with extra olive oil and generous grated Parmesan cheese.
