Blood Orange & Blueberry Wheat Pancakes


  • 1 3/4 cups milk
  • 4 Tbsp White Aged Balsamic
  • 2 eggs beaten
  • 1/3 cup Blood Orange EVOO
  • 1 tsp salt
  • 3 Tbsp sugar
  • 3 Tbsp baking powder
  • 1 tsp baking soda
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 cups blueberries


  • Mix milk and white balsamic vinegar. Let stand 5 minutes.
  • Combine all dry ingredients well. Add milk mixture, blood orange olive oil and eggs, and briefly mix with a wooden spoon. Let batter rest 5 minutes.
  • Preheat griddle to medium-high. Use about 1/4 cup batter for each pancake, turn when bubbles appear and edges are set. Serve with a reduction of Cinnamon Pear Balsamic, orange juice, and honey for something different and lower in calories. Or pour on the maple syrup and indulge. You deserve it!
