Blood Orange & Blueberry Wheat Pancakes

  • Mix milk and white balsamic vinegar. Let stand 5 minutes.
  • Combine all dry ingredients well. Add milk mixture, blood orange olive oil and eggs, and briefly mix with a wooden spoon. Let batter rest 5 minutes.
  • Preheat griddle to medium-high. Use about 1/4 cup batter for each pancake, turn when bubbles appear and edges are set. Serve with a reduction of Maple Balsamic, orange juice, and honey for something different and lower in calories. Or pour on the maple syrup and indulge. You deserve it!
