
Truffle Garlic Mashed Potatoes

Ingredients
- 4 large potatoes peeled and cut into 1 inch cubes.
- 1/2 cup whole milk
- 1/2 cup reserved potato water
- 1/4 cup Olive Oil Marketplace Black Truffle w/Garlic EVOO purchase here
- salt
- 3 sprigs parsley chopped
Instructions
- Boil potatoes until fork-tender, drain (reserve 1/2 cup potato-boiling water) and place in a large bowl.
- Add milk, potato water, and Black Truffle EVOO.
- Whip potatoes using a hand mixer or food processor.
- Salt to taste. Garnish with chopped parsley.
