
Oven Roasted Smoked Sausage and Potatoes

Ingredients
- 1 package of smoked sausage
- 1 large onion peeled and chopped
- 5 large potatoes peeled and chopped into 1/2 inch cubes
- Olive Oil Marketplace Black Truffle Olive Oil purchase here
- Sea salt
- freshly ground black pepper
- Get-R-Smoked Smoked Paprika
- dried thyme
- a handful of grated strong cheddar cheese
Instructions
- Preheat the oven to 400*F
- Line a large baking tray (with sides) with several sheets of foil, and drizzle with a bit of oil. Spread the oil out over the pan. Set aside.
- Put the sausage rounds, onions and potatoes into a large bowl.
- Drizzle with a couple TBS of olive oil and season to taste with salt, pepper, paprika and dried thyme.
- Toss together with your hands until everything is evenly distributed.
- Pour this out onto the baking tray, and spread it out as much as you can.
- Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender.
- Turn off the oven.
- Scatter the cheese over top of the cooked meat and potatoes, Pop back into the oven a few minutes to melt the cheese.
- Serve immediately

I have a couple of questions. I am trying to get out of the same old same old I usually cook.
I realize the taste would be different, but do you think it would still turn out ok without the onion and using maybe only salt and pepper?
Also, how many potatoes do you think would work for only two people?

Of course it would work without onion and still taste great. I would use just a couple large potatoes.. Enjoy

What kind of side dish would be good with this meal. Vegetables?
I would defiantly recommend vegetables as a side dish…. Corn, Green Beans, Brussel Sprouts..

Im cooking this with skinless smoked sausage, white potatoes with skins left on, Vandalia onions and Miss Dash garlic herb seasoning and black pepper. I am always looking for varieties of quick meals and this one is the bomb.
Looks great. If you don’t want to use the oven you can do the same thing in a cast iron skillet stovetop. This meal has been around since before the depression. Though the types of sausage and additions of certain seasonings to use have changed overtime it’s basically the same. Make this meal with some Southern style pinto beans and you got yourself a full belly i guarantee

Myself and my spouse absolutely Love this recipe..It’s become 1 of our favorite dishes for dinner and I love how everything is in 1 bowl to shake up,dump in your pan/bake and…. WA-LA…Dinner is served..( Baking times do vary..I find I hafta bake half hour longer. ) .but it turned out AMAZING!! It taste so good..Leftovers? Ha Ha!! By evening end..there are NO leftovers!
