
Garlic Chicken Primavera
Ingredients
- 2 Chicken breasts cubed
- 2 oz. Olive Oil Marketplace Tuscan Herb EVOO - Purchase Here
- 2 oz. Olive Oil Marketplace Garlic EVOO - Purchase Here
- 2 oz. Olive Oil Marketplace White Lemon Balsamic - Purchase Here
- 1 Cup Cherry tomatoes
- 1 Cup Spinach chopped
- 1 Cup 1 Cup Yellow peppers chopped
- Yellow squash chopped
- 1 Garlic clove
- 1 lb. Penne pasta
- 1/4 Cup Parmesan cheese
Instructions
- Cut chicken breast into cubes and season with salt & pepper.
- In a large pot heat Tuscan Herb Olive Oil, add chicken and chopped garlic cloves - cook until no pink is showing.
- In a separate pot boil some penne pasta (add a pinch of salt to water and a splash of Garlic Olive Oil so that pasta does not stick).
- Once chicken is cooked add cherry tomatoes, chopped spinach, yellow peppers, yellow squash and cook for about 2 minutes.
- Add a cup of Parmesan cheese and pasta. Stir until cheese is melted and evenly distributed.
- Drizzle a little White Lemon Balsamic on before serving.
