
Roasted Strawberry Feta Bruschetta
Ingredients
- 1 pint Strawberries washed, dried, and sliced in half
- 3 Tbsp Olive Oil Marketplace Strawberry Balsamic - Purchase Here
- ¼ tsp + ½ tsp Sea Salt - Purchase Here
- Ground black pepper to taste
- 4 oz block of Feta cheese broken into chunks
- 1 cup Greek Yogurt
- 4 Tbsp Olive Oil Marketplace Basil EVOO - Purchase Here
- 1 clove of Garlic
- 1 Tbsp water
- 4 leaves Basil chopped
- 1 loaf of French Bread sliced (toasted, if desired)
Instructions
- Preheat the oven to 375 degrees.
- In a medium bowl, combine the strawberries, Strawberry Balsamic, ¼ tsp Sea Salt, and ground black pepper to taste. Toss to combine and fully coat the strawberries.
- Transfer to a baking sheet.
- Place the strawberries in the oven and bake for 30 minutes. Set aside when done.
- Make the feta dip:
- In a food processor, combine the feta cheese, Greek yogurt, Basil Olive Oil, garlic, ½ tsp sea Salt, cracked black pepper to taste, and water.
- Blend until smooth, and transfer to a serving dish.
- Spoon the roasted strawberries over half of the feta cheese. Finish the dish with a drizzle of Basil Olive Oil, cracked black pepper, and the chopped basil. Serve with the french bread. Enjoy!
