Ingredients
- 1 whole head of red cabbage, shredded
- 2 medium Apples, peeled, cored and cut into matchsticks
- 1 large carrot, shredded
- ¾ cup dried raisins (cranberries or dried cherries are good too)
- ¾ cup pecans, roughly chopped
- ¼ cup plus 1 tablespoon lemon juice, fresh squeezed
- ¼ cup Olive Oil Marketplace Grapeseed Oil (purchase here)
- ¼ cup honey
- 2 tablespoons Olive Oil Marketplace Apple Cider Vinegar (purchase here)
- 1 teaspoon salt
Instructions
- Combine shredded cabbage, apples, shredded carrots, raisins
- and chopped pecans in a large serving bowl. Set aside.
- Combine the lemon juice, grapeseed oil, honey, apple cider vinegar,
- salt and pepper in a bowl and whisk vigorously until combined.
- Pour dressing over the cabbage and toss to combine.
- Cover and refrigerate for an hour before serving. Serve with lemon
- wedges on the side.
