
Get-r-Smoked Chili
Cook Time 4-6 hrs > Meat Finish Temp: 160°F > Recommended Wood: Pecan or Cherry > Makes approx. 1 gal
Ingredients
Smoked Meat:
- 1 lbs ground chuck or ground beef leaner the better
- 1 lb ground pork sausage - or pulled pork
- 1 Onion chopped
- 1 Sweet Pepper 1/2 red - 1/2 yellow - chopped
- 1 TBS Garlic - chopped
- OOM Get-R-Smoked Old Fashion Chili - Meat Seasoning Packet purchase here
Sauce:
- 1 - 10 oz can of Rotello hot or original - or Petite tomatoes 14oz
- 2 - 6 oz cans tomato paste
- 2 - 13 oz can of tomato sauce
- 1 - 14 oz can of Chili Beans hot or mild
- 1 - 15 oz can of Kidney Beans not drained
- 4 oz of old cheese block of Parmigiano-Reggiano.. A block or handful of sharp cheddar or cheddar also works well)
- OOM Get-R Smoked - Sauce Seasoning Packet purchase here
Instructions
- Smoked Meat:
Prepare you smoker 225-235 degrees (can do in oven as well without smoke)
- Combine all smoked meat ingredients in a large bowl - mix together well (like a meatloaf)
- Form like a meat loaf into a foil pan and Get-R-Smoked about 4 hours or until internal temp is 160 degrees.
- Remove from pan and chop up
Sauce:
- Large stock pot - Combine all the Sauce ingredients
- Simmer the sauce for several hours. (or at least till the meat is done)
Let's Put-R-Together:
- Combine the Smoked meat with Sauce mixture - stir well.
- Taste it!!!
Optional: Transfer to a roasting pan and put back on Smoker uncovered for a 3-4 hours (Every hour, give it a stir and add water as needed - getting some good Smoke flavor into the chili)
