Blood Orange Olive Oil Salad w/Roasted Chicken and Feta Cheese




  • 2 green onions chopped
  • 6 cups red Romaine lettuce torn into bite-sized pieces
  • 1 pound fresh roasted chicken breast cut into 1/2-inch cubes
  • 2 stalks celery thinly sliced
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled Feta cheese


  • For the dressing, whisk all ingredients in a medium bowl and set aside. Place Romaine lettuce in a large salad bowl. Add chicken, celery, sesame seeds and dried cranberries. Pour dressing over salad and toss. Sprinkle with crumbled feta cheese
