
Blood Orange Olive Oil Salad w/Roasted Chicken and Feta Cheese
Ingredients
Dressing:
- 5 tablespoons Olive Oil Marketplace White Peach Balsamic Vinegar
- 1/3 cup Olive Oil Marketplace Blood Orange EVOO
- 1 teaspoon Dijon mustard or Olive Oil Marketplace Duck Butter
- 1/4 teaspoon kosher salt
- 1/4 teaspoon fresh ground pepper
Salad:
- 2 green onions chopped
- 6 cups red Romaine lettuce torn into bite-sized pieces
- 1 pound fresh roasted chicken breast cut into 1/2-inch cubes
- 2 stalks celery thinly sliced
- 2 tablespoons toasted sesame seeds
- 1/4 cup dried cranberries
- 1/4 cup crumbled Feta cheese
Instructions
- For the dressing, whisk all ingredients in a medium bowl and set aside. Place Romaine lettuce in a large salad bowl. Add chicken, celery, sesame seeds and dried cranberries. Pour dressing over salad and toss. Sprinkle with crumbled feta cheese
